Pumpkin Chocolate Chip Muffins



Hi - this is Becky. This is my first blog post. I recently moved to the suburbs and had a baby, so I can't go out to eat as often as I used to. Now cooking and baking have sort of become a new hobby for me. I created this blog to share recipes with my family and maybe even some new followers too! I will be posting recipes on here along with my mother, my sister, my cousin and my aunt. Some of us are more experienced cooks than others :) My style will be easy recipes, with common ingredients, that don't take too long to prepare. This pumpkin chocolate chip muffin recipe is exactly that kind of recipe.

Pumpkin Chocolate Chip Muffins
Ingredients:
1 box of spice cake mix
1 can of pumpkin
1 c. semi sweet chocolate chips

Directions:
Mix together the spice cake mix and pumpkin with an electric mixer. Stir in the chocolate chips. Line a muffin tin with cupcake wrappers and fill with the mixture. (I usually fill each wrapper pretty high - these cupcakes don't rise too much. I usually get 16 muffins total). Cook according to the directions for cupcakes on the cake mix box.

Note: right now I have a lot of leftover muffins so I put them in a ziplock bag and froze them. To defrost, microwave the muffin for about 15 seconds.
